- The leaves for Gong Mei are plucked during April, May and June in the Fujian Province of China. The lack of processing and hand selection is evident in the leaf appearance of this tea. Gong Mei teas are named for the long, thin, crescent-shaped leaves used in production. The leaves are not steamed or pan-fired (the process used in green teas) or fermented and fired (the process used in black tea). Instead, the leaves are naturally withered and dried in the sun. The western cosmetic industry is beginning to make a white tea extract to be worn underneath your moisturizer. The reason is that it seems white tea has been shown to be more effective in mopping up free radicals that cause skin to sag. A tea expert has been quoted as saying ‘unlike black or green tea, it isn’t rolled or steamed, which preserves its antioxidant properties.
- Gongmei Tea Bricks is considered to be the 3th grade tea to come from the tea plants. The first grade is Yin Zhen Silver Needle, which consists solely of fine tips. The second grade is Bai Mu Dan White Peony, which consists of some tips plus smaller leaves. The third grade is called Gong Mei, although often this tea is combined under the more famous Shou Mei name.

The cup has a subtle sweetness and is well-balanced, with delicate walnut flavor overtones.
- This Gongmei Tea Bricks tea is harvested from untended bushes growing in the Guan Yang area of Fuding (Fujian province) at an altitude of 900 meters. Tea soup is a deep orange color, and the brewed leaves are light brown in color. The qi is very balanced, and the tea leaves have excellent stamina. You can feel the relatively high-altitude growing conditions when drinking this tea!

Tips:
Gaiwan: Use 5-6g of dry leaf in your typical porcelain Gaiwan. Hit it hard with boiling spring water. Start with steeping for about 10 seconds, pouring out the soup through a quality strainer. As your session progresses, add about 10 seconds for each successive steeping.
Kettle: Kettle brewing is simply brewing it in your electric kettle. Bring 2-3 cups of spring water. Toss in about 5-6g of dry leaf. Turn down the heat to medium and let it roll around anywhere from 5-15 minutes with some occasional stirring. Strain and let cool to drinking temps.
