- Shou Mei is a style of White Tea that is grown in the Fuding area of Fujian province of China. The tea is the same varietal that is used to make Bai Hao Yin Zhen (Silver Needles) and Bai Mu Dan (White Peony), but Shou Mei is (less tippy) a 2 or 3 leaf to 1 bud ratio. The processing style also allows for more oxidation through natural air drying.
- ShouMei Dragon Ball (壽眉龍球, Shòu Méi Lóng Qiú, "Longevity Eyebrow Dragon Ball") - These single-pot 5-gram dragon balls (a small spherical cake of tea without a divot) are perfect for introducing someone (including yourself) to the taste of aged white tea without committing to a full bing.
- Shou Mei was aged as a loose leaf tea for 2 years in Fuding and then for 3 years in Kunming before being made into these handy little dragon balls. The result is a lightly aged, but very clean ShouMei that brews up an incredibly rich orange hued tea soup. The taste is very sweet with notes of honey, and dried fruit. Incredibly viscous and smooth, with no real astringency at all (even at higher temperatures).
- Shou Mei is a grade of white tea that is mostly leaves (as opposed to buds) and ages more quickly than finer grades like White Peony and Silver Needle, attaining a deep, rich flavor with notes of dried stone fruit and a honey fragrance. The liquor is red and has a sweet lingering huí gān 回甘 ("returning sweetness").
- A great ShouMei dragon ball tea to put in your bag or pocket and make anywhere you find hot water, aged white tea can be brewed “grandpa style” and does quite well that way, as it does not get bitter with long infusions. This ShouMei tea will continue to get better with age. As the classic white tea idiom goes: “one year tea, three years medicine, seven years treasure.”
- To fully appreciate its delicate flavors, start by rinsing the tea ball with boiling water. For the first infusion, steep it for approximately 30 seconds in water heated to 195ºF (90ºC). This careful preparation method helps to gently coax out the intricate flavors. In a 100ml Gaiwan, reduce the steeping time to a mere 5 seconds for the second infusion, and then increase the duration by an additional 5 seconds for each subsequent infusion, allowing the ShouMei tea to gradually reveal its depth and complexity.
