The Gaiwan: The Dual Charm of Brewing and Drinking Tea

The *gaiwan*—literally a "lidded bowl"—is a tea vessel consisting of three parts: the bowl, the lid, and the saucer (or "tea boat"). It is also known as the "Sancai Bowl" (Bowl of the Three Powers), referring to Heaven, Earth, and Humanity. The lid represents Heaven, the saucer represents Earth, and the bowl in the center represents Humanity.

This modest tea set embodies a miniature world—a microcosm—reflecting the ancient philosophical principle: "Heaven covers, Earth supports, and Humanity nurtures."

Connoisseurs of the tea ceremony know that true appreciation involves observing the color, inhaling the aroma, savoring the flavor, and admiring the shape of the leaves. Brewing tea in standard cups or teapots makes it difficult to observe the color and shape of the leaves or to adjust the strength of the brew. Straight-sided cups often cause tender buds to over-steep and "cook" in boiling water, destroying the elegance of the experience and reducing it to mere "gulping." Large teapots—popular in Northern China—allow the tea to cool quickly and the aroma to dissipate, making the tea lose its appeal over time. Furthermore, prolonged steeping degrades the quality. Whether viewed from the perspective of aesthetic appreciation or health and wellness, the shortcomings of standard cups and teapots are evident.

In contrast, the *gaiwan*—with its bowl, lid, and saucer—boasts a unique design and exquisite craftsmanship. The bowl tapers from a wide rim to a narrow base, the lid fits snugly inside, and the saucer provides a stable foundation. The lid stays secure while drinking, and the saucer protects the hands from the heat. One can maintain balance simply by holding the saucer; there is no need to remove the lid entirely—tilting it slightly allows the tea to flow out slowly while keeping the leaves inside, offering a delightful experience and avoiding the annoyance of leaves clogging the spout or entering the mouth. The lid also serves a functional purpose: if a stronger brew is desired, one can gently scrape the surface of the water with the lid to circulate the tea. A light scrape yields a milder flavor, while a vigorous scrape produces a stronger brew—a truly ingenious feature. There are a few handy tips for selecting and using a *gaiwan* (lidded bowl).

**Selecting a *gaiwan*:** Opt for a bowl with a flared rim; this design ensures a significant gap between the maximum water level and the edge of the rim. With this shape, even when the bowl is filled with hot water, the rim remains cool enough to hold comfortably without burning your fingers.

**Water volume:** After placing the tea leaves in the bowl, add just enough water to cover them—do not overfill. Some people tend to fill the bowl to the brim, which inevitably makes it too hot to handle. Furthermore, using excessive water results in a diluted brew.

**Pouring technique:** Hold the *gaiwan* straight and steady, resting your fingers on the rim rather than gripping the body of the bowl out of fear of dropping it. Tilt the bowl slowly toward your serving pitcher (*gongdao bei*) to allow the tea to flow out gently; this prevents the liquid from touching your hand. If the bowl is tilted unevenly, the tea may run down the side, creating a high risk of scalding. Moreover, getting burned while pouring forces you to pause; even a brief interruption allows the remaining tea to continue steeping the leaves, which alters the flavor profile of the brew.
